1 cup B’gan chopped broccoli
1/8 cup flour
1 egg
1 cube of frozen Gefen sauteed onions
1/8 teaspoon onion salt
1/8 teaspoon pepper
1/8 teaspoon garlic powder
oil, for frying
1/4 cup shredded mozzarella cheese
Microwave broccoli for one to one and a half minutes. Strain all the liquid out in a fine mesh strainer.
In a bowl, mix broccoli together with flour, egg, onion, and seasoning.
Heat up a frying pan with one to two tablespoons oil.
When oil is hot, drop spoonfuls of the batter into the pan and flatten slightly. Sprinkle some cheese in the center of each latke and cover with a little more batter.
Fry for one and a half to two minutes until golden brown and then flip and fry on the other side for one minute.
Pat dry on paper towels and sprinkle a little salt on the latkes.
Serve with dipping sauce of your choice – sour cream highly recommended! Make a bracha and enjoy!
This recipe yields 6 latkes.
