Ingredients

Cheesy Caulifower Fritters

  • 12 ounces fresh or frozen riced cauliflower, such as Beleaves

  • 2/3 cup shredded cheddar cheese

  • 1/4 cup Glicks Flour

  • 2 large eggs

  • 3/4 teaspoon Gefen Salt

  • 1/4 teaspoon ground black pepper, such as Gefen

  • 2–3 tablespoons butter

  • fresh basil

Directions

1.

Place riced cauliflower in a microwave-safe bowl and cover. Microwave until fully cooked, about 4 minutes for fresh cauliflower or five minutes for frozen. Let cool for a few minutes.

Add cheese, flour, eggs, salt and pepper and mix well.

Using a 1/4-cup measure, form patties and place on a plate.

Heat a large frying pan over medium-high heat. Melt two tablespoons butter.

Cook fritters until crispy, about one minute per side, making sure not to overcrowd the pan. Add remaining one tablespoon butter as needed.

6.

Add toppings of your choice and serve immediately.

Notes:

To make blistered tomatoes, preheat oven to 425 degrees Fahrenheit. Fill an oven-safe dish with one pint of cherry tomatoes. Drizzle generously with olive oil and season with salt and garlic powder. Mix to coat evenly. Roast for 15–20 minutes or until tomatoes are blistered.
