Diets My kids are big fans of these. I love making them in the summer as a nourishing pre-dinner snack for when they come home starving after riding around the block on their bikes. The toppings take this recipe to the next level.
Yield: 1 dozen
12 ounces fresh or frozen riced cauliflower, such as Beleaves
2/3 cup shredded cheddar cheese
1/4 cup Glicks Flour
2 large eggs
3/4 teaspoon Gefen Salt
1/4 teaspoon ground black pepper, such as Gefen
2–3 tablespoons butter
1 avocado, sliced
crumbled Ta’amti Feta Cheese
blistered tomatoes (see note)
fresh basil
Place riced cauliflower in a microwave-safe bowl and cover. Microwave until fully cooked, about 4 minutes for fresh cauliflower or five minutes for frozen. Let cool for a few minutes.
Add cheese, flour, eggs, salt and pepper and mix well.
Using a 1/4-cup measure, form patties and place on a plate.
Heat a large frying pan over medium-high heat. Melt two tablespoons butter.
Cook fritters until crispy, about one minute per side, making sure not to overcrowd the pan. Add remaining one tablespoon butter as needed.
Add toppings of your choice and serve immediately.
