I don’t know about you, but if I am going to be eating a salad it needs to be seriously good. What I love about this one is that there are so many different textures and flavors, and when they all come together, they make a little party in your mouth…and that is what makes it a seriously good salad!

Ingredients

Salad

  • 1 bag romaine lettuce

  • 1 bag red cabbage

  • 1 bunch scallions, chopped

  • 1 red pepper, sliced

  • 1 yellow pepper, sliced

  • 1 10-ounce box cherry tomatoes, halved

  • 1 and 1/2 cups cooked quinoa

  • 1/2 cup pine nuts

  • 1 (6-ounce) package Mexican turkey, sliced

  • 1 (6-ounce) package pastrami, sliced

Dressing

  • 2 tablespoons sugar

  • 1 tablespoon water

Directions

Prepare the Chef Salad

1.

For dressing, combine all ingredients in a container. Shake vigorously until combined.

Place all salad ingredients in a large bowl. Drizzle with dressing and toss until evenly combined. Serve immediately.
