Cherry Kale Salad

Ingredients

Salad

  • 3 cups kale, chopped small

  • 1/2 cup shredded red cabbage

  • 2 Persian cucumbers, sliced

  • 3 scallions, washed and sliced

For the Dressing

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

Directions

1.

Place all the vegetables in a bowl, set aside while you make the dressing.

2.

To prepare the dressing, place everything in a jar, shake well. Pour over salad and gently toss before serving.

Notes:

If you’re not serving the salad immediately, place the dressing in the fridge until ready to serve.
