Delicious Chestnut Soup
1 lg onion
2 sticks celery
2 carrots, chopped
1 medium squash
4 pk roasted chestnuts, chopped (total 1lb)
1 T salt
2 T chicken soup mix
black pepper to taste
1/2 coffee creamer (optional)
In a 6-qt pot, sauté onion until light golden. Add celery and saute for 2 minutes. Add carrots and saute for 5 min. Add squash and saute for another 5-10 minutes, then fill up pot 3/4 with water and bring to a boil.
Add seasonings and chopped chestnuts. Lower flame and cook for 30 minutes. Blend the soup. Add coffee creamer if using.
