These soft chocolate chip cookies are addictive!
3/4 cup oil
1/2 cup sugar
1 cup brown sugar
2 eggs
1 and 1/2 teaspoons vanilla extract
1 teaspoon salt
1 teaspoon baking soda
2 and 1/2 cups flour
1 cup chocolate chips
In a stand mixer, mix all ingredients in order, making sure to thoroughly mix the sugars, oil and eggs.
Roll into 2-tablespoon sized balls on a parchment lined tray. Bake in a 350F degree oven for 8-10 minutes. Allow cookies to set on tray for 5 minutes before removing from tray to a cooking rack.
Chill covered overnight in the refrigerator for best results.

I make it as a cake and it’s delicous
The crisp outside and the softness inside is delicious, made it to break my fast.
Turned out great but the batter was a bit to sticky to form the cookies
Made this as a cake and came out absolutely delicious
Doubled the recipe before reading the comments and was afraid for a minutes that I wasted all those ingredients…. BUT! They turned out great!! Used my mixer and really let it go to town to get the sugar dissolved (which didn’t happen, there’s so much sugar!), and cooked about 13 mins instead of 8-10. They came out fluffy and soft, not bitter at all (it’s the baking soda that makes them bitter, btw), and really more like cake than a cookie. Satisfied! I’ll make them again.

Amazing! We tried them and they were great but a bit to much oil
We tried the Cookies, and they tasted AMAZING!!
We only used half the amount of Brown sugar, and it was great that way.
