Chewy Pecan Coconut Cookie

Ingredients

Main ingredients

  • 2 eggs

  • 1 tsp almond extract

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp vanilla sugar

  • 1 cup brown sugar

  • 1/2 cup organic sugar or honey

  • pinch of salt

  • 1 cup unsweetened applesauce

  • 2 stick margarine

  • 1/2 cup olive oil

  • 1 cup coconut flakes

  • 2 cup oats

  • 2 and 1/2 cups flour or whole wheat flour

  • 30 pecans for décor

Directions

Prepare the Cookies

1.

Beat eggs. Add baking powder, baking soda, all sugars, salt , applesauce, margarine and oil. Mix well.

2.

Slowly add coconut, oats, and flour. Combine all ingredients till you get a sticky mixture.

3.

Grease two cookie sheets and use a medium scoop to form balls. Place cookies an inch apart no more than three in a row.

4.

Place a pecan in center of cookie and bake on 350F for 15-20 min.

5.

Cool and indulge.
