Chicken Caesar Bowl

This is one of my favorite “no time” dinners because it’s light, delicious, and satisfying. No one will care that dinner took five minutes to prepare. If you didn’t think that rice and coleslaw work together in a salad…you just haven’t tried it yet. It’s one of my favorite combinations. This meal takes about two minutes of hands-on time and just a few more of cooking time.

Directions

Yield: serves 2 as a meal or 4 as a salad

1. Season chicken with salt, pepper, and fresh garlic.
2. Heat a grill pan until hot and grease with nonstick cooking spray. Once hot, add chicken and grill for about three minutes per side. Set aside and cut into strips.
3. Add romaine lettuce to a bowl. Top with grilled chicken strips, rice, coleslaw, and croutons. Drizzle with Caesar dressing and enjoy.
