This recipe was adapted from the Spice & Spirit cookbook, but added my tried and true ingredients to make an exceptional chicken chulent that will be enjoyed on any Shabbos! This can serve 2 to 4 people. Use a larger pot and add more chicken, potatoes, grains, and veggies if serving additional guests.
4 chicken thighs, 6 drumsticks, or 2 chicken legs, bone-in
2 turkey ends, 1 turkey wing, or 1 small smoked turkey leg (optional)
1/2 cup farro, rinsed
1/2 cup, barley, rinsed
1/2 green pepper, deseeded and chopped
1 small to medium sized potato, peeled and diced
1 carrot, peeled and chunked
1 medium sized yam, peeled and cut into large chunks
1 large yellow onion, chopped
1/2 can pinto beans, drained and rinsed
1/2 can great northern beans, drained and rinsed
1/2 can garbanzo beans, rinsed
3 garlic cloves, minced
1/2 teaspoon Lior Baharat Seasoning (or other baharat brand)
1 teaspoon Lawry’s Seasoned Salt (to taste, or plain salt)
1 teaspoon onion powder (or to taste)
1 teaspoon garlic powder (or to taste)
1 to 2 tablespoons soy sauce or Tamari (low sodium is good also)
2 tablespoons potato starch
1/2 teaspoon white pepper or 1/4 teaspoon black pepper (or to taste)
1 teaspoon paprika (Sweet Moroccan Paprika in oil is preferred)
hard boiled eggs, optional
water or chicken broth, to cover 1 inch above ingredients
Mix farro, barley, beans, veggies (not the potatoes) and dry spices with the potato starch. Set aside.
Line a five to seven-quart oven-safe pot with an oven liner. Place potatoes on the bottom, then add the barley-beans-veggie mixture you set aside.
Tuck in the turkey or marrow bones, if using.
Tuck in the eggs.
Add water or broth. The chicken should not be completely submerged.
Place the chicken on the top.
After adding water, sprinkle in the soy sauce.
Sprinkle the chicken with paprika, garlic, salt and pepper to give color.
Twist the oven liner and tuck to the side of the pot.
Cover with foil over the opening of the pot and place lid onto the pot, smashing the rim of the lid on foil to seal.
Bake at 350 degrees Fahrenheit for one and a half hours. Check to see if you need to add more water or broth.
Tuck oven liner and reseal with parchment and foil and bake at 200 degrees Fahrenheit for 2 to 3 hours. Then place onto the blech.
Alternatively, just bake at 200 degrees Fahrenheit overnight.
