An easy one-pot chicken and potatoes stovetop meal.
2 tablespoons chicken fat or oil
1 chicken, quartered or 4 chicken breasts, cubed
1 onion, chopped
6 large potatoes, quartered
1 carrot, grated (optional)
1 cup water
1/2 teaspoon salt
Heat oil in large skillet. Sear chicken on both sides over high heat until golden. Remove from pan.
Reduce heat, add onion and sauté until transparent.
Add chicken and all ingredients, bring to a boil.
Simmer, covered, for one and a half hours until tender, adding liquid if necessary.
