While your standard chicken salad is smooth and spreadable, change things up with this chunkier variation. Courtesy of the Women’s Branch of the OU. (Image is for illustrative purposes only. Corn is considered kitniyot and therefore avoided by Ashkenazim on Passover.)
1 cooked chicken
1/4 cup vinegar or lemon juice
1/4 cup oil
2 teaspoons chopped onion
1 rib celery, diced
3/4 cup Gefen Mayonnaise (or homemade)
salt and pepper
1 hard-cooked egg, diced (optional)
Cut chicken in bite-sized pieces and place in bowl.
Serve on bed of lettuce.
Add rest of ingredients and mix well.
