Learn how to prepare a delicious, refreshing grilled chicken salad that the whole family will enjoy. A friend made this recipe for sheva brachos and received “oohs and aahs” all around. For another variation, check out this chicken salad recipe from the OU.
2 chicken cutlets
2 tablespoons Bartenura Olive Oil
1 bag romaine lettuce or any leafy lettuce
1 box grape tomatoes
1 purple onion, sliced
1 box croutons
1 bag baby spinach leaves
handful of pine nuts
1/2 cup sugar
1 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon paprika
3/4 cup oil, such as Gefen Canola Oil
1/2 cup vinegar
1/2 cup Glicks Ketchup
1 clove garlic, minced or 1 cube Gefen Frozen Garlic
Marinate chicken cutlets in schwarma spice and oil in a zip-top bag for a few hours or overnight.
Grill or broil in oven until just cooked through. Slice into thin strips.
Combine remaining six salad ingredients with grilled chicken strips.
For dressing, in a separate bowl, combine dressing ingredients and pour over salad immediately before serving.
