A scrumptious way to get those all-important nutrients from these vitamin packed veggies – spinach and chickpeas. Your kids will never guess it’s good for them 🙂
1 TBSP olive oil
1/2 medium onion diced
3 cubes frozen garlic or 2 TBSP crushed garlic
1/2 bag frozen spinach
2 cans chickpeas, drained
1/2 can crushed tomatoes
1 tsp honey
1 tsp fresh lemon juice
1 tsp dried thyme or leaves from 3 sprigs of fresh bug-free thyme
Salt and pepper to taste
1 TBSP olive oil
1/2 cup breadcrumbs
Preheat oven to 350°F. Grease a large quiche dish with Gefen baking spray.
Heat oil in large pot over medium heat. Add onions and garlic and cook until onions are light brown.
While that is browning, add spinach to boiling water and cook until wilted. Drain. Add the spinach and the rest of the ingredients to the pot. Reduce the heat and simmer until most of the liquid has evaporated.
Add the olive oil to the breadcrumbs and mix with a fork until crumbly.
Spoon the mixture to the prepared dish. Sprinkle with the topping and bake about 10-15 minutes until top is browned.
