Chinese Chicken Salad

Chicken is a popular meat in many Chinese dishes. The Chinese commonly flavor the bland taste of chicken with different seasonings and spices to create an exciting dish. This salad is easy to put together for an everyday supper and festive enough for Shabbos too.  

Ingredients

Main ingredients

  • roasted peanuts

  • 1 piece broiled schnitzel, cut up (see note)

Dressing

  • 1/2 teaspoon ginger

  • 2 tablepoons Gefen Sesame Oil, optional

  • 1/2 teaspoon dry mustard (see note)

Directions

Assemble the Salad

1.

Arrange veggies on a plate; add broiled schnitzel pieces.

2.

Pour over dressing right before serving. Garnish with chow mein noodles and peanuts.

Combine dressing ingredients and set aside.

Notes:

  •  1 teaspoon dry mustard equals 1 tablespoon prepared mustard, so you can sub 1/2 tablespoon prepared mustard.   • The schnitzel can be marinated before, but this is optional. A marinade adds flavor, softens the chicken (or meat), and thereby shortens the grilling/cooking time. You can use one of your choice, or make your own by combining soy sauce, honey, crushed garlic, lemon juice, lemon zest, and water. For real gourmet taste (this is a little sweeter), use creme de casis, lemon juice, brown sugar, pickled cherries, salt, pepper, and sesame oil. Fresh chopped herbs, white wine, and garlic is delicious as well. Use your imagination and don’t be afraid to experiment.

Great Asian Flavour This is a great recipe! The dressing has a really delicious and ‘high-end’ taste (for want of a better word) – definitely nice enough for yom tov!
I only used one tablespoon sesame oil as its quite strong and that was a perfect amount – any more would have been too much
I love the asian flavour of this dressing and also the addition of peanuts to the salad
