These no-bake cheese truffles taste very similar to the famous cheese balls from Daskals in Boro Park.
Yield: approximately 40 balls
1 pound farmer cheese
1 stick butter, softened
1/2 cup Gefen Confectioners’ Sugar
1 bag (Ostreicher’s) lemon cookies (10 ounces), crushed (gluten-free, if needed)
2 (3-and-1/2-ounce) bars of two-tone chocolate
Combine first four ingredients in a large bowl; form mixture into walnut-sized balls.
Run a peeler over the chocolate bars to form chocolate curls.
Roll balls over the chocolate curls to coat.
