Chanukah is always a holiday full of light and joy. We enjoy time with our families and friends eating deep fried foods, playing dreidel, and giving gifts.
But this year is different. It is more special than usual… but why?
Because this year, when we light the candles, we are going to ask God for a lot of light in the world; we are going to ask to witness a miracle, the miracle of Chanukah, just as happened many years ago with the Maccabees.
With God’s help, may there be only peace and light in the world.

Makes 6 pastries
2 cups water
1 cup Glicks All-Purpose Flour
pinch of salt
2 tablespoons butter or margarine
2 eggs
1 tablespoon Haddar Vanilla Extract
granulated sugar, to dust
cinnamon, to dust
churrera or pastry bag with star-shaped tip
oil, for frying
dulce de leche
In a medium pot, heat the water with the butter and salt. Once it boils, add the flour and stir with a spatula until a paste is formed.
Remove from the heat, put the batter in a mixer bowl, and begin to beat. Add the eggs, one at a time, with the vanilla. Once it is creamy, put it inside the pastry bag with the tip and cut off the edge.
On a baking sheet lined with parchment paper, form discs of batter. Place in the freezer for one hour.
Preheat a pot over medium/high heat with plenty of oil. Gradually add the churros and fry them until they are golden brown. Remove to a plate lined with paper towel, then roll in sugar.
Allow to cool. Once cold, fill the churros with dulce de leche.

Can I pipe this batter into long strips and make regular churros
Can I fry them right out of the bag or I must freeze them first (if making them long strips)
You can do that- better to use the star shape pipe though & check that there are no air bubbles on the dough so it doesn’t explode while frying.
