Make these fun cinnamon bun bites in a pinch by simply using a rolled-out pie crust and sprinkling it with cinnamon and sugar. 1/2 cup (1 stick) butter, softened
1 (8-ounce) container cream cheese (any type)
1 teaspoon Gefen Pure Vanilla Extract or vanilla bean paste
4 and 1/2 cups Gefen Confectioners’ Sugar
1/4 cup milk
Preheat oven to 350 degrees Fahrenheit.
Let pie crust thaw at room temperature. When pie crust is soft but still cold, turn out onto a piece of parchment paper. Roll using a rolling pin. Trim edges to create a square or rectangle shape. You can add the scraps to the end to make the square or rectangle bigger. The longer the shape, the smaller the cookies will be, but the more you’ll have.
Sprinkle the dough with cinnamon and then sprinkle generously with sugar. Roll up dough, jelly-roll style.
Using a serrated knife, slice dough (like you would cinnamon buns). Place on a parchment-lined baking sheet. Bake for 12 minutes.
Meanwhile, combine frosting ingredients in the bowl of an electric mixer. You will only need a little bit of the frosting (save the rest for real cinnamon buns or to top a red velvet cake!) Enjoy cookie bites with frosting.
