Submitted to Kosher Scoop by gr8twin This is a great recipe for this who do not use potato starch on Pesach. Very good!
2 egg whites
1/2 cup sugar
2 cups Gefen Ground Almonds
1 tablespoon Gefen Cinnamon (if you don’t use you can skip)
1 tablespoon grated orange peel
Preheat the oven to 325 degrees Fahrenheit. Grease cookie sheet or Gefen Parchment Paper.
Beat egg whites until stiff. Add sugar- beat in nuts, cinnamon, orange peel.
Form into balls with wet hands. Place on parchment paper/greased pan.
Bake for 15-20 minutes until “just” firm –Don’t make it crunchy!
Optional: Remove, roll in confectionery sugar while warm. Cool and roll again if you want.
