Diets Fry up delicious blintzes using this classic recipe. Submitted by Margie Feldmen-Miller of Oakbrook, IL.
3 eggs
1 cup flour
1/4 cup sugar
3/4 cup milk
1/4 cup water
In a bowl combine the eggs, add flour and sugar and beat to combine.
Mix in the milk and water a little bit at a time until you get a batter.
Heat a frying pan on medium/high heat and spray with nonstick spray.
Pour in just enough batter to coat the pan. When it starts to bubble and the bottom is slightly brown, flip the blintz wrapper and let it sit for another 30 seconds or so on the other side; slide onto a plate.
