  • 1 and 1/2 sticks margarine

  • 1/2 cup sugar

  • 3/4 cup brown sugar, packed

  • 2 eggs

  • 2 teaspoons Gefen Vanilla Extract

  • 2 cups flour

  • 1/2 teaspoon Gefen Baking Soda

  • 1/8 teaspoon salt

  • 8 ounces shredded, unsweetened coconut

  • 1 and 1/2 cups coarsely chopped macadamia nuts

Directions

Prepare the Cookies

Preheat oven to 300°F.

In a large bowl, mix margarine with sugars until the mixture has a grainy texture. Scrape down the sides of the bowl. Add eggs and vanilla extract and beat until light and fluffy.

In a separate bowl, combine flour, baking soda, and salt; add this to the sugar-egg mixture in the bowl, mixing until combined. Add coconut and macadamia nuts and mix at low speed until just combined. Do not over-mix.

Drop by rounded tablespoonfuls onto ungreased cookie sheets, two inches apart. (If smaller cookies are preferred, drop by one and 1/2 teaspoonfuls.)

5.

Bake for 20 to 25 minutes. Transfer immediately to a cool, flat surface.

Notes:

Store cookies in an airtight container at room temperature for up to 4 days, or freeze for up to 2 months.
