A coconutty, unusual cookie that is a delight to savor.
1 and 1/2 sticks margarine
1/2 cup sugar
3/4 cup brown sugar, packed
2 eggs
2 teaspoons Gefen Vanilla Extract
2 cups flour
1/2 teaspoon Gefen Baking Soda
1/8 teaspoon salt
8 ounces shredded, unsweetened coconut
1 and 1/2 cups coarsely chopped macadamia nuts
Preheat oven to 300°F.
In a large bowl, mix margarine with sugars until the mixture has a grainy texture. Scrape down the sides of the bowl. Add eggs and vanilla extract and beat until light and fluffy.
In a separate bowl, combine flour, baking soda, and salt; add this to the sugar-egg mixture in the bowl, mixing until combined. Add coconut and macadamia nuts and mix at low speed until just combined. Do not over-mix.
Drop by rounded tablespoonfuls onto ungreased cookie sheets, two inches apart. (If smaller cookies are preferred, drop by one and 1/2 teaspoonfuls.)
Bake for 20 to 25 minutes. Transfer immediately to a cool, flat surface.
