You can never have enough cookie recipes in your recipe box! These cookies will definitely make it to your top ten. These are a soft, chewy cookie with a combination of coconut and lime that will have you reaching back into the cookie jar. Serve these just the way they are or bring them up a notch by topping them with lime icing and coconut.
Yields 40 cookies
1 and 1/2 cups sugar
1 cup (2 sticks) margarine
2 and 1/2 cups Glicks Flour
3/4 cup ground coconut
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/4 teaspoon lime extract
3 tablespoons lime juice
1 teaspoon lime zest
4 cups Gefen Confectioners’ Sugar
2 tablespoons lime juice
1/4 cup hot water
1 drop of green food coloring
shredded coconut, for garnish, optional
Cream sugar and margarine, then add remaining ingredients and mix to combine.
Scoop balls of dough onto a greased cookie sheet. Chill in the refrigerator for 30 minutes.
Preheat oven to 350 degrees Fahrenheit. Bake cookies for 10 minutes.
While cookies are baking, mix icing ingredients in a bowl until smooth. Drop a spoonful into the center of each cookie, turning it until the icing spreads all over. Sprinkle with shredded coconut before icing sets.
