We can all use a little boost every now and then. We so often run ourselves ragged and drain ourselves of our precious energy. These energy bites are a sweet little pick-me-up that you can prep on Sunday and have ready all through the week! With ingredients that are super good for you, like coconut, flaxseed, and turmeric, these decadent bites give you a kick in a way that respects your body and keeps your health in mind. Makes 10 to 12 bites
1 cup (140 grams) unsalted roasted cashews
2 tablespoons ground flaxseed
1 tablespoon chia seeds
1 teaspoon ground turmeric, such as Pereg
1 cup (180 grams) packed, pitted dates
3 tablespoons fresh lime juice or Heaven & Earth Lime Juice
1 cup (80 grams) unsweetened shredded coconut
In a food processor, pulse the cashews until coarsely ground. Add the flaxseed, chia seeds, and turmeric and pulse for 10 seconds to combine.
Next, add the dates and lime juice to the food processor and pulse until a sticky mixture forms. Add the shredded coconut and pulse until well combined.
Scoop the mixture into a small bowl. Shape about two tablespoons into a ball. Continue until all the mixture is gone.
Refrigerate the bites for at least one hour in a dealed container. Enjoy them as a quick snack whenever the need strikes. Keep the bites in a sealed container in the fridge for up to five days.
