For a naturally sweetened topping, try this refreshing whipped cream on fruit, waffles or other desserts.
1 (13-and-1/2-ounce) can full-fat coconut milk or coconut cream, refrigerated overnight
1/2 teaspoon Gefen Vanilla Extract
1/2 medium ripe banana
Chill a mixing bowl (ideally stainless steel) and the beaters of a hand mixer (or the whisk attachment for a stand mixer) in the refrigerator.
In another bowl, mash the banana until completely smooth and set aside.
Remove cream from the top of the can of coconut cream, leaving behind the liquid underneath. Add cream to the chilled bowl along with the vanilla extract and beat until soft peaks form, about one to two minutes.
Lightly fold mashed banana into the whipped cream until incorporated. Use as desired.
