Diets These healthy breakfast, lunch or snack bars are so divine. Ooey, gooey, sweet, and chewy. No wheat, no sugar! Its a couple of steps, and some freezer time, but definitely not a difficult recipe. Try ’em out!
15 dates, soaked in hot water
1 and 1/2 cups almond flour
1 teaspoon vanilla
1 cup melted peanut butter
1 cup melted chocolate
1 cup crushed pistachios
1/2 cup tahini
1/2 teaspoon salt, to taste
Soak the dates in hot water for 10 minutes and drain.
In a large bowl, stir the almond flour, vanilla, peanut butter and salt with a spatula. Flatten on one side of a large parchment. Fold parchment over to cover mixture, and fix it into a perfect square. (If you’re a perfectionist like me). Freeze.
In a food processor, blend the dates for three minutes until nice and smooth. Add the tahini and blend until incorporated.
Remove the flour mixture from freezer. Peel off the parchment from on top, and drizzle the melted chocolate. Smear to cover all over. Next, smear the date mixture on top of the chocolate. Sprinkle the pistachios and freeze for at least an hour.
Slice into rectangles and package them pretty. Freeze overnight for more firm bars or eat straight away!
Not necessary, but I love to drizzle with chocolate!
