2 zucchinis, washed and cubed
2 red peppers, washed and cubed
2 yellow peppers, washed and cubed
2 green peppers, washed and cubed
16 ounces (450 grams) fresh mushrooms, cubed
2–3 tablespoons Gefen Olive Oil
parsley, finely chopped, to taste
Gefen Salt, to taste
Pereg Pepper, to taste
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking sheet with Gefen Parchment Paper.
Place all vegetables in a container. Drizzle with oil, then season generously with parsley, salt, and pepper. Secure the lid and shake vigorously to coat evenly.
Spread the mixture onto the prepared baking sheet and bake for 30 minutes. Serve warm.
