Colorful Vegetable Latkes

They may not be made of starchy potatoes, but they are fried in oil… Change up your usual Chanukah fare with grated vegetable latkes. 

Ingredients

Main ingredients

  • 1/4 teaspoon salt

  • 1/4 teaspoon white pepper

  • 1/4 teaspoon dried rosemary

  • canola oil for frying

Directions

Make the Latkes

1.

Shred potatoes, onions and zucchini.  Place in a colander and let sit for 10 minutes, squeezing occasionally to ensure that all the vegetables are mostly dry.

2.

Shred carrots and add to the shredded vegetables.

3.

Place shredded vegetables into a bowl and mix together with remaining ingredients.

4.

Heat a large frying pan with a few tablespoons of oil and drop batter by tablespoon-full onto the hot oil. Flip over when underside is brown.

5.

Serve with applesauce or sour cream.

Notes:

I prefer to use the ground rosemary for this recipe, but you can just crumble the larger rosemary leaves between your fingers.

Use for kugel? Looks great! Can I use this mixture to make kugel? (obvs baking for longer?)

You probably can – i would just double the potatoes quantity otherwise it’ll likely be a very small kugel!
