Confetti Cabbage Salad with Grilled Chicken

Ingredients

Salad

  • 1 package shredded red cabbage

  • 1 package shredded green cabbage

  • 1 bunch scallions, washed and sliced

  • 1 cup fresh parsley, washed and chopped

  • 1 cup fresh cilantro, washed and chopped

  • 3 grilled chicken breasts, diced

Dressing

  • 1 teaspoon Dijon

  • 1 and 1/2 teaspoons salt

  • 1 teaspoon pepper

  • extra wide Chinese noodles

Directions

1.

Empty each package of shredded cabbage onto a large cutting board and roughly chop into smaller pieces.

2.

Pour into a bowl and add scallions, herbs and chicken.

3.

Combine all dressing ingredients and pour over the salad. Toss to coat and enjoy immediately.

4.

For added crunch, use extra wide Chinese noodles to scoop up the salad. Store leftovers in the refrigerator to enjoy again later.
