Two fresh ways to repurpose leftover chicken. Each comes together in one pan in less time than it takes to run a load of laundry.
1 medium onion, diced
3 tablespoons oil
1 green pepper, chopped
1 tomato, chopped
2 chicken breasts, cooked and cubed
3 slices salami or 1 frankfurter (optional)
1 onion, chopped
2 stalks celery, diced
1/2 red pepper, diced
1/2 green pepper, diced
2 chicken breasts, cooked and diced
1/2 teaspoon salt
1/4 teaspoon pepper
Sauté onions in oil until transparent.
Add pepper and tomato.
Cook, covered, over low heat, for 20 minutes.
Add chicken and salami, cook for 10 minutes or until thoroughly heated.
Sauté onion in liberal amount of oil until transparent.
Add celery and peppers and sauté for 15-20 minutes or until tender.
Add chicken and spices, cook for 10 minutes or until thoroughly heated.
