Diets These Passover cookies are the perfect treat to enjoy first thing in the morning with a hot cup of coffee or tea.
3 cups Gefen Almond Flour
1/2 cup brown sugar
1/2 cup white sugar
1 tablespoon Gefen Vanilla Sugar
1 teaspoon salt
1 teaspoon baking powder
2 eggs, lightly beaten
Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
Place all the ingredients in a bowl. Stir to combine.
Make golf ball size balls and use your hand to slightly flatten to form into thick oval shapes.
Place on baking sheet, two inches apart.
Bake for six to eight minutes, until edges are slightly golden and cookies are cooked through. Allow cookies to cool for five minutes on the baking sheet before moving them to a wire rack to finish cooling.
Yields: 2 dozen cookies

Three days into Pesach, I’m doing my third double batch of cookies. Everyone loves them. Good thing they are so easy to make.
These are really easy and yummy. I did find them a bit sweet so will cut down on the sugar a little next time. I pressed a chocolate chip in the middle of each cookie before baking to dress up the appearance.
