Cookies ’N Cream Ice Cream is a fabulous flavor, but why let ice cream have all the fun? These easy-to-make bars are really exceptional — mostly thanks to the flavor and texture of the crushed cookies that are mixed in!

Ingredients

  • 1 cup oil

  • 1 cup sugar

  • 2 eggs

  • 2 tablespoons milk or soy milk

  • 1 teaspoon baking soda

Directions

Prepare the Bars

Preheat oven to 350 degrees Fahrenheit. Grease a 9 x 13-inch baking pan; set aside.

In the bowl of an electric mixer, on medium speed, beat together oil, sugar, and eggs until combined and smooth. Add milk, baking soda, vanilla, and salt. Beat to combine.

Reduce mixer speed to low; add flour. Beat until combined. Batter will be thick.

Remove bowl from mixer; use a rubber spatula to stir in the cookie crumbs. Mix until evenly distributed.

5.

Pour batter into prepared pan; bake for 30 minutes, until the center is set. Cut into squares.

Tips:

There’s no need to crush the cookies in a food processor, as you want small pieces, not crumbs. Place the cookies into a plastic bag within a second bag. Crush them with a heavy pan or rolling pin — you should see pieces and crumbs of varying sizes.

Notes:

These bars can be frozen in an airtight container. For best results, freeze whole; cut into squares just before serving.
