This one is just so refreshing and crisp—a perfect summer afternoon salad! When the hunger pangs strike and you’re sitting by the pool (or by the lake, the park, on a hike or a long drive…wherever you may be) this summer, this is what you want to be digging into! Satisfying and delicious, you’ll savor each bite…and you’ll probably have to share your portion with everyone sitting around you, too!
2 cups cooked cracked wheat/ wheat berries (according to package instructions)
2 pounds vine tomatoes, diced
1 cup red onion, finely diced
1 cup fresh mozzarella, diced (bring to room temperature for easier dicing)
1/2 cup Gefen Extra-Virgin Olive Oil
3 tablespoons Tonnelli Red Wine Vinegar
1 teaspoon sugar
2 teaspoons kosher salt
1 teaspoon freshly cracked Gefen Pepper
1 tablespoon fresh or dried oregano
1 teaspoon fresh basil, roughly chopped (optional)
Drain extra juices from tomatoes. Combine cooked wheat berries, onion, tomatoes, and mozzarella.
In a small bowl, mix all dressing ingredients together and shake well to emulsify. Pour dressing over salad at least an hour before serving to give it time to marinate.
