This is a wonderful winter salad that combines the tartness of fresh cranberries, with the sweetness of dried ones, sprinkled with some feta cheese on top.
3/4 cup Israeli couscous (uncooked)
1/2 cup fresh cranberries
2 teaspoons honey
2 teaspoons olive oil
1/4 cup dried cranberries
1/4 cup crumbled feta cheese.
In a pot, combine the couscous and fresh cranberries with 3/4 cup of water.
Add in the honey and bring to a boil. Let simmer for eight to 10 minutes.
Pour the couscous into a bowl and mix in the olive oil, dried cranberries and cheese. Mix well together and serve.
