Diets This is an easy to make, distinctly dairy-tasting soup.
1 onion, diced
1/4 cup butter
8 ounces frozen chopped spinach
2 zucchini, diced
1/4 cup flour
6 cups water
3 tablespoons onion soup mix or 4 bouillon cubes
salt, to taste
pepper, to taste
3 cups 4% milk fat (red) milk
In a 4-quart pot, over medium to high heat, sauté onion in butter until tender and golden brown.
Add vegetables and cook for 2 minutes, stirring often. Add flour and cook another 2 minutes, stirring constantly.
Mix in the next four ingredients and cook for 20 to 25 minutes.
Puree soup with hand blender. Add milk and cook until the soup boils.
