Cream of Green Soup


This is an easy to make, distinctly dairy-tasting soup.


1. In a 4-quart pot, over medium to high heat, sauté onion in butter until tender and golden brown.
2. Add vegetables and cook for 2 minutes, stirring often. Add flour and cook another 2 minutes, stirring constantly.
3. Mix in the next four ingredients and cook for 20 to 25 minutes.
4. Puree soup with hand blender. Add milk and cook until the soup boils.
