Diets The carbs contained in potatoes are rapidly absorbed leading to weight gain. These creamed lima beans are a great substitute.
1 pound Gefen Lima Beans
2 onions
1 clove garlic
1/2 teaspoon salt
1/4 cup oil
1/2 stick trans-fat-free margarine
2 cups broth (vegetable or chicken, such as Manischewitz)
1/4 teaspoon Gefen Onion Powder
1/4 teaspoon Gefen Garlic Powder
pinch salt
pinch pepper
1 teaspoon xanthan gum
In a four-quart pot, cover lima beans with two inches water.
Bring to a boil, then cook one hour or until soft.
Sauté onion and garlic in oil. Add beans and salt.
Blend with immersion blender.
In a pot, melt margarine.
Add rest of ingredients. stir and bring to a boil. Whisk until smooth.
Drizzle over mashed lima beans.

can i freeze this?
I haven’t tried it before. Since it’s similar to mashed potatoes I would assume so but I’m not sure.
