Easy prep, healthy and amazingly delicious soup!
4 onions
6 squash, peeled
2 medium sweet potatoes
2 stalks celery
1 cup cauliflower, small pieces (optional)
2 tablespoons oil
10 cups water
1 and 1/2 tablespoons salt (as needed)
black pepper (as needed)
Peel onions, cut into large pieces (two to four pieces). Put into pot. On top of onions, place squash and sweet potatoes (large pieces). Sauté in oil half an hour.
Add water, salt, pepper. Blend with immersion blender until smooth. Add tiny pieces celery and cauliflower. Bring to a boil and simmer for another 3/4 hour.
Serve hot or warm. Be prepared for requests for seconds.
