Learn how to prepare my favorite creamy, parve courgette soup.
1 medium onion, chopped
4 medium courgettes (zucchini), peeled and cubed
2 cloves garlic or 2 cubes Gefen Frozen Garlic
1 tablespoon salt
Sauté onions in olive oil. Add courgettes, garlic and cilantro.
Cover vegetables with water plus a bit more. Season with salt.
Cook for 20 minutes on medium-high flame. Enjoy!!!
