1. Heat oil, add diced onions and garlic and let sauté until the garlic starts to brown, three to five minutes.
2. Add tomatoes and mash with a potato masher; let cook for five minutes.
3. Add bread and brown sugar; blend with immersion blender (not fully) after the bread is saturated.
4. Add soup mix and water and bring to a boil.
5. Add salt and pepper and one more tablespoon oil. Let simmer for five minutes and serve. Enjoy!!
