I look forward to this salad every Pesach. I love that the dressing is prepared ahead, assembles in a snap, and there are never any leftovers. Although I am unsure of its origin, this oldie but goodie is something everyone will enjoy.
1 16-ounce bag romaine lettuce
1 16-ounce bag shredded red cabbage
1/2 red onion, sliced thinly
1 cucumber, peeled and sliced in thin circles
1 red pepper, sliced thinly
1 cup grape tomatoes, washed and sliced in half
fresh mushrooms, sliced (optional)
1 cup Gefen Mayonnaise (or homemade)
1 clove garlic or 1 cube Gefen Frozen Garlic
3 scallions
1/4 cup Gefen Dry Parsley Flakes
1 and 1/2 tablespoons lemon juice
1 tablespoon vinegar
1/4 teaspoon salt
pepper, to taste
Place all dressing ingredients in food processor and pulse until smooth.
Assemble salad. Dress and toss until well blended.
