Diets An Asian twist on the creamy cucumber salad that’s appearing on everyone’s table.
1 English cucumber, unpeeled, thinly sliced
1/2 teaspoon kosher salt
Gefen Sesame Seeds, toasted
1/4 cup Gefen Mayo
2 tablespoons Glicks Soy Sauce (use a wheat-free version for gluten-free)
1 tablespoon Gefen Maple Syrup
1/2 tablespoon rice vinegar
1 teaspoon Gefen Sesame Oil
1/2 tablespoon sambal oelek (Asian hot sauce), optional
Salt cucumber slices and let sit in a colander for 10-15 minutes (you can skip this step, but it ups the flavor and texture).
Whisk together dressing ingredients.
Pat cucumber dry with paper towel.
Toss cucumber with dressing (you don’t need to use all of it). Garnish with toasted sesame seeds.
