Submitted by Bayla Barkany This recipe was born when I had defrosted chicken breasts but had no eggs in the house to make my go-to recipe. I was rummaging in my cupboard and found a bag of crispy fried onions. Well, the rest is history:)
4 pieces of boneless chicken breasts, cut into small, nugget sized pieces
1 heaping tablespoon of mayonnaise
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup cornflake crumbs
1/2 cup crispy fried onions
1 teaspoon paprika
non stick spray (like Pam)
Preheat the oven to 425 degrees Fahrenheit.
Mix the chicken with mayonnaise, garlic and onion powder.
In a separate bowl, mix corn flake crumbs, onions and paprika together.
Dip the chicken into the crumb mixture and place on a parchment lined cookie sheet. When all the chicken is coated and on the pan, spray liberally with non stick cooking spray. Bake for 20-25 minutes.
