I knew I had serious work to do. My five year old is a very picky eater, but the one food he likes is fried chicken. How will he possibly get through Pesach without his crispy bread-crumbed fried chicken? I needed to come up with a good solution. After trying a few different versions, my family voted this version as the crunchiest with the best flavor. Once my little guy gave it his stamp of approval, I knew this recipe would be good to go in your families as well.
1 and 1/2 pounds chicken cutlets
2 cups Gefen Almond Flour
1 teaspoon Gefen Onion Powder
1 teaspoon salt
3 eggs, beaten
oil, for frying
In a medium bowl, combine almond flour, onion powder, and salt and mix well. Place egg in a second bowl.
Cut chicken into small pieces and dip into almond flour mixture, then beaten egg, then coat the chicken in the almond flour mixture again.
Heat oil in a frying pan over medium-high heat. When the oil is hot, place the chicken in frying pan and fry until golden brown, around five minutes. Carefully flip the chicken over and fry for another minute. Remove from pan.
