I like using drumsticks, as they are somewhat more appealing than whole chicken legs and are easier for kids to eat. You can prep these right after work and have them ready in time for supper, since the baking time is much shorter. Yield: 6 drumsticks
6 chicken drumsticks, skinned
3/4 cup Gefen Mayonnaise
1/8 cup Gefen Barbecue Sauce
1 teaspoon mustard
2 teaspoons Gefen Honey
2 and 1/2 cups French fried onions
oil, for drizzling
Preheat oven to 350 degrees Fahrenheit.
Pat chicken dry.
In a medium-sized bowl, mix together mayonnaise, barbecue sauce, mustard, and honey.
Place the onions in a second bowl.
Coat drumsticks in the mayonnaise mixture, then transfer chicken to the onions and coat, pressing down so they get well coated.
Place drumsticks in a 9×13-inch pan. Drizzle oil over chicken.
Bake uncovered for one hour.
