Sauté or brown the gnocchi, because it really enhances the flavor of this dish. It’s an al dente, light, and flavorful dish that’s really restaurant quality. The best part is, it’s so short on time and great for beginners. Can easily be doubled to serve four.
2 tablespoons salted butter, divided
1/2 red onion, diced
1 cube frozen garlic
1/2 pint grape tomatoes, halved
8 ounces (1/2 package) Tuscanini Gnocchi
1 cube frozen basil
salt
pepper
crumbled feta cheese, as desired
In a nonstick skillet, place the diced onion and tomatoes with one tablespoon of butter. Add the garlic and sauté for a few minutes, until the onions are cooked through.
Add the gnocchi to the pan along with the other tablespoon of butter and one frozen basil cube. Season generously with salt and pepper and continue to sauté until the gnocchi have started to crisp and are a little browned.
Top the gnocchi with feta cheese and enjoy!
