Crispy "Healthier" Latkes

This latke is made with a variety of vegetables, making for a somewhat more nutritious Chanukah indulgence.

Start Cooking

Prepare the Latkes

  1. Grate the vegetables either with a kitchen aid attachment or a box grater. Squeeze all the liquid out through a cheesecloth or paper towel.

  2. Combine remaining ingredients.

  3. Heat oil over medium. Scoop into pan by tablespoon and firmly press down with a spatula. Let brown for five minutes per side.

  4. Eat while warm and top with sour cream and chives if desired.

    I only use frozen caulifower how much is 1/2 a head?

    Hi, I would say- 1 (24 oz) bag of cauliflower is around 1 head of cauliflower.
