This latke is made with a variety of vegetables, making for a somewhat more nutritious Chanukah indulgence.

2 russet potatoes
1 zucchini
1/2 head of cauliflower
1/2 onion
2 eggs
1 teaspoon baking powder
1/2 teaspoon Haddar Kosher Salt
1/2 teaspoon onion powder
sunflower oil, for pan frying
Grate the vegetables either with a kitchen aid attachment or a box grater. Squeeze all the liquid out through a cheesecloth or paper towel.
Combine remaining ingredients.
Heat oil over medium. Scoop into pan by tablespoon and firmly press down with a spatula. Let brown for five minutes per side.
Eat while warm and top with sour cream and chives if desired.

its about 2 cups I just checked it out
I only use frozen caulifower how much is 1/2 a head?
Hi, I would say- 1 (24 oz) bag of cauliflower is around 1 head of cauliflower.
