4 potatoes
1/2 cup flour
1 box Manischewitz potato pancake mix, prepared according to directions
oil, for frying
2 packages beef or duck fry
jalapeños, for topping
Preheat oven to 400 degrees Fahrenheit.
Slice potatoes into thin slices, discarding the edges.
Coat slices in flour and then coat in prepared potato pancake mix.
Fry coated potatoes until soft and not yet crispy.
On an inverted mini muffin tin press the soft potatoes between the grooves, forming taco shapes.
Bake on the muffin tin for 10-15 minutes until tacos have crisped up (it’s helpful to put the muffin tins in a nine x 13 or on a baking sheet to avoid oil dripping onto your oven).
Dice beef/duck fry into small pieces and add to a dry pan. Cook until fat is rendered and meat is crispy.
Yields 16 mini tacos
Once cooled, the taco will hold its shape and can be filled with crispy beef or duck fry.
Top with a jalapeño and serve with some guacamole for the full taco experience!
