I’ll make this quick (so you can make this, quick!)   This recipe is all about simple, satisfying staples. You can use what’s in your pantry to make a masterpiece in your microwave! Mix and match ingredients to create your favourite morning or pre-workout snack.   For the Body:

  • Loaded with fibre and healthy fats to keep you satiated long-term.
  • Black strap molasses provides a good source of iron to help build red blood cells.
  • Contains fast and slow releasing carbohydrates to curb cravings and keep you full.
For the Soul:
  • Can be made in minutes to help you save time.
  • Can be made with varying ingredients to suit every pantry and preference.
  • Stays fresh in the cupboard and can be easily packed for a quick snack anywhere.

Ingredients

Crispy Molasses Microwave Granola

  • 3 cups rolled oats (gluten free if needed)

  • 1 cup nuts, chopped (Any nuts will do – the more variety the better: hazelnuts, pecans, almonds, brazil nuts, cashews, walnuts, peanuts, whatever you’ve got, throw ‘em in there)

  • 1/2 cup seeds of choice (Again, use what you’ve got! Sunflower and pumpkin are my favorite)

  • 1/4 cup flax seeds

  • 1/4 teaspoon salt

  • 1 tablespoon cinnamon

Directions

Prepare the Crispy Molasses Microwave Granola

1.

In a large, microwave-safe bowl mix oats, nuts, seeds, salt, and cinnamon together until well combined.

2.

Add melted coconut oil, tahini, honey, and molasses and mix until distributed equally.

3.

Microwave on high for two minutes, then stir mixture well.

4.

Microwave on high for another two minutes or until mixture appears dry, and stir well.

5.

Transfer hot mixture onto a cookie sheet lined with parchment paper or silicon mat and spread evenly to cool.

6.

Once granola is completely cool, transfer into an airtight container. Serve over yogurt and fruit, on smoothies or by itself. Stays fresh for up to 1 month. Makes about five cups.
