Crispy Salmon with Broccoli and One-Pot Creamy Pasta

This pasta and salmon are delicious on their own, but together on a plate for supper they are even better! It’s a must-try meal you’ll be coming back to often.

Ingredients

One Pot Creamy Pasta

  • 1 teaspoon salt, more to taste

  • 1/2 cup cream cheese

  • 1 cup shredded mozzarella cheese

Crispy Salmon and Broccoli

  • 2 cups rice crispies

  • 2 tablespoons plus a couple shakes everything bagel seasoning

  • 1 bag broccoli, such as Beleaves Frozen Broccoli

Directions

Prepare One-Pot Creamy Pasta

1.

Place the pasta, water, milk, butter, garlic, and salt into a large pot. Cover the pot and bring to a boil on high heat.

2.

Uncover, lower to a simmer and mix.

3.

Cover the pot and continue cooking for 10 minutes.

4.

Uncover and mix again. If the noodles aren’t soft to your liking, cover the pot and allow to cook till noodles are softer, just a few minutes.

5.

Once noodles are soft enough, turn off the flame.

6.

Mix in the cream cheese and shredded cheese.

7.

Cover once more and let sit to melt for a few minutes.

8.

Uncover and mix again.

9.

Add more salt if needed and black pepper if you’d like. Enjoy!

Notes:

Pasta is best enjoyed fresh. Reheat in the microwave or if reheating on the stove add half a cup of milk or water and reheat on medium heat.

Prepare the Salmon and Broccoli

1.

Preheat the oven to 425 degrees Fahrenheit.

2.

Place the salmon into a Gefen Parchment lined baking sheet.

3.

Mix together the mustard, mayo, and onion powder. Spread evenly over the salmon.

4.

Crush up rice crispies in a ziplock bag using a rolling pin or your hands. Add in two tablespoons everything bagel seasoning. Shake to combine.

5.

Sprinkle on top of the salmon and press in slightly.

6.

Spray the top of the salmon with oil spray as well as around on the parchment.

7.

Place the broccoli around the salmon and shake on the everything bagel spice. Spray the broccoli with oil.

8.

Bake uncovered for about 30 minutes.

You are not meant to drain the water after cooking it?

Nope, it’ll all get absorbed into the noodles and the sauce. You won’t have any water to drain 🙂
