Crunchy Avocado and Tomato Salad with Veggie Croutons

Ingredients

Salad

  • 1 bag romaine lettuce or mixed greens

  • 1 pint grape tomatoes, halved

  • 1 ripe avocado, cut into chunks

  • 2 cubes Gefen Frozen Cilantro

  • 3 tablespoons olive oil

Directions

Prepare the Salad

1.

Place avocados and tomatoes in a bowl.

2.

Mix together olive oil, lime juice and cilantro.

3.

Toss tomatoes and avocados with dressing and season with salt and pepper.

4.

On a platter, arrange avocado and tomato mixture over the lettuce and top with Veggie Croutons.
