A super easy, healthy and addictive tofu snack or main with a light coconut flavor and satisfying crunch.
1 package extra-firm tofu
1 cup almond milk (or plant-based alternative)
1.5 cups panko crumbs
1/2 cup coconut flakes
Himalayan or sea salt, to taste
Preheat oven to 375F.
Carefully cut the block of tofu in half, then in 1 inch sticks.
Blot the sticks carefully with paper towels to remove excess moisture.
Combine the panko crumbs, coconut flakes and salt in a bowl.
Dredge the sticks gently in a bowl of almond milk, then the crumb-coconut mixture.
Line the sticks in a single layer on parchment paper and spray with Pam.
Bake until golden and crisp, about 20 minutes.
Serve with sweet chili dipping sauce.
