Sneaky sugar resides in a lot of basic dinner options, like meatballs, barbecue sauce, duck sauce and teriyaki. Here is a hearty dinner recipe that is quick and easy and doesn’t have any flour or added sugar.
2 tablespoons oil
1 onion, chopped
1 parsnip, diced small
1 carrot, diced small
3 cloves garlic
1/2 tablespoon Italian seasoning (or any herbal blend you like)
2 teaspoons salt
black pepper, to taste
1 pound ground chicken
1 large tomato, peeled and diced
1 and 1/2 cups soy milk or almond milk like Gefen Almond Milk
4 eggs
Sauté the onion, parsnip and carrot in oil until softened but not fully cooked through.
Mix in the garlic, Italian seasoning, salt and pepper. Add the ground chicken, breaking it up with a fork so the pieces are small. Let it cook for three minutes until the chicken is cooked through.
Turn off the flame and add the tomato. Let the mixture cool.
Meanwhile, mix the pareve milk and eggs. Add the egg mixture to the cooled chicken mixture.
You can bake this as one big quiche or divide it into muffin tins for individual quiches. Bake at 350 degrees Fahrenheit until the quiche is set and does not jiggle when you shake it. Baking time will vary based on the size of your pan.
